Tomorrow is the long awaited Grand Opening of the new H-E-B in Allen, TX. Folks have been waiting a long time for a store to open close to McKinney. I’ve never been to one, but I guess it’s a Happenin’ place. I am more excited because my friends Michele and David Bernard have their awesome salsas available there. Plus, there is a coupon alert! You know how I love a bargain.
David and Michele Bernard started making salsa just for friends and family a LONG time ago. I remember sitting on their back porch with friends, and everyone telling them that they need to bottle that magic stuff. Long story short, after a lot of hard work and homemade salsa start up headaches, they entered a Best Salsa contest sponsored by the H-E-B grocery store chain, and they won. Of course they did. We all knew that they would. Now, their amazing salsas are carried in all the H-E-B stores and other local shops around town.

It’s funny. I didn’t even know about the Grand Opening when I went into my pantry on Sunday to grab a jar of my favorite salsa. (I always have a few jars on hand.) I wanted to whip up a little snack for my friends Linda and Vyto who were visiting from out of town. I love the Mango Pineapple Y Habanero mixed with some softened cream cheese. It’s pretty spicy stuff, so I only add about half a jar.
Here’s a flashback from a focaccia frittata I made a while ago. Oh man, I’m getting hungry just lookin’ at this.

So, if you’re anywhere near an H-E-B, get yourself over there and get you some awesome Bernard’s Gourmet salsas.

It was pretty much a dreary gloomy grey day, but that’s ok. I had nowhere I needed to go, and nothing I had to do. Needless to say, I stayed under the warm covers till nearly noon. (Don’t Judge me! Just be jealous.)

I’ve been looking forward to using some of the handcrafted Vegan cheese that my California boy sent me for Christmas. I was in shock when I saw that he spend $66 just for shipping for about one pound of cheese, four small containers. But, he was so enthralled with the talented gentleman vegan cheese maker he met at a shop in LA, that he wanted to share with his mom.

He looks like an interesting guy, doesn’t he?

I decided to combine my Culinary loves, Mexican food (food, as I call it), flour tortillas, Matt’s wonderful vegan cheese, and my friends’ awesome salsa. Bernard’s Gourmet Foods Salsa, a little of my blackeyed pea salsa, baby spinach and tomato.

I even used a dry nonstick pan to make the vegan quesadillas. If I would have used butter, that would have taken away the whole vegan thing. (Matt would be proud.)

I cooked on a very low simmer so the cheese would melt.
Then, top with a little tomato y red pepper Bernard’s Salsa. YUM!

So, that’s what’s Cookin’. I enjoyed every bite. Thanks Matt. Thanks David and Michele Bernard. Thanks Youssef.

I wanted to send a big shout out and thank you to David and Michel Bernard. I texted Michele the other day and told her I was going to be near her house and wondered if I could pick up a few more jars of their awesome yummy award winning salsa. I was down to my last jar and I wanted to pick up some for gifts for my local fire stations. She told me that she didn’t have any at home, but David was out making deliveries, so he could drop some off at my house. I didn’t want anyone to go out of their way, and I wasn’t sure if I’d be home. I said I’d leave an envelope under the front door mat.

David delivered the boxes. Inside a gift box was a lovely note saying how much they appreciate my always sharing my salsa recipes on Facebook and always supporting our local fire fighters. She said the salsa was a gift along with a beautiful salsa bowl . I have the sweetest most generous friends on the planet,

Today, my Elvis on the Shelvis is sitting on my lap while I enjoy my Friday night Black Russian.
