Some more Better than Mrs. Fields chocolate chip cookies.

I cut my cold rolled dough into thin slices and placed on parchment paper. I was down to my last roll from the freezer. 🤦‍♀️
I placed exactly 5 round Carmel bits (You can add more. I do a lot of baking.) around and a slice of Three Musketeers candy in the center of each slice. (This made 21 cookies.)
They were pretty thin, so I had to be careful not to over bake or they’d burn. Every bite was delicious. I don’t look at time, I just check every few minutes. Let them cool before you remove with a spatula. They pretty delicate when warm. 🤦‍♀️
Tada!!!! The secret is to only save two or three for yourself and give the rest away. Trust me! 🤦‍♀️ 🍪

Here’s my recipe…. Better than Mrs. Fields Chocolate Chip Cookies

2 c. butter
2 c. sugar
2 c. brown sugar
4 eggs
2 tsp. vanilla
4 c. flour
5 c. oatmeal (grind 3 c. Leave 2)
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
24 oz. chocolate chips
18 oz. chopped Snickers or Hershey or favorite candy. (Optional)
(Optional- chopped nuts)

Makes a lot of cookies. I make rolls and freeze some. Makes about 10 rolls.

Mix softened butter, sugars, eggs, and vanilla in really big bowl. Blend in dry ingredients. I like to make the day before and refrigerate rolls. Slice. Bake at 350° just before they get brown. They’ll keep cooking after removed. It’s all guesswork. Better to undercook than burn, I always say.

Happy baking.

“Life is short, so exercise, eat a good breakfast, meditate on the awesomeness of life, then eat cookies.”

~Toni Armenta Amdrukaitis

***************************

This morning, I had a healthy breakfast of avocado toast, topped with spinach and tomatoes, and a side of fruit.
I put in over 7,000 steps on my walk today. I meditated in the morning, went to the grocery store, filled up my car with gas, 🤦‍♀️, and did some housework.
Life is short, so after All that exercise and a healthy breakfast, well, time to eat cookies. In an attempt to help use up stuff in my freezer, I took out a roll of my famous Better Than Mrs. Fields Chocolate Chip cookie dough from the freezer that I made a while back. Remember, I’m trying to free up freezer space.
I chopped up Hershey’s candy, and other left over Russel Stover candy that I never got around to eating. (Yes, candy sits around my house uneaten all the time. I sliced the cookie dough, piled up the chopped up candy, then topped with another slice of dough. I press the edges together and flatten them out a bit, then bake.
Oh my gosh! They are so delicious. The texture from using half oatmeal in the recipe makes them amazing.

The whole roll only made 8 cookies, but they’re BIG delicious cookies. I’m only allowing myself one a day. Well, maybe 2! 🤦‍♀️

If you are one of the few people in the world who hasn’t seen this recipe… here ya go.

I wanted to share my awesome recipe for chocolate chip cookies that I’ve been using for at least a couple of decades. Before I left for my chicago adventure, I made a double batch of…BETTER THAN MRS. FIELDS CHOCOLATE CHIP COOKIES. I made enough to share with a few neighbors, my firemen, and friends. The best part is that I baked some and then made cookie dough rolls to give to some friends so they could bake them fresh at a later time, or bake with the grandkids.

Better than Mrs. Fields Chocolate Chip Cookies

2 c. butter
2 c. sugar
2 c. brown sugar
4 eggs
2 tsp. vanilla
4 c. flour
5 c. oatmeal (grind 3 c. Leave 2)
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
24 oz. chocolate chips
18 oz. chopped Snickers or Hershey or favorite candy.
(Optional- chopped nuts)

Mix butter and sugars and eggs and vanilla in really big bowl. Blend in dry ingredients. Mix by hand when it gets to thick at the end.. Add chocolate chips and candy. Roll into balls on parchment paper cookie sheet, and press down with your palm.

I usually double the recipe, then form cookie dough rolls to freeze for a rainy day. (Mix once- bake often.)

I bake around 350° on parchment paper lined cookie sheets. You can tell if the oven is too hot if they brown to quickly. Also dark non-stick pans need less heat. 325° or 330°, from experience. Don’t over bake till dark brown.

I doubled the above recipe. Yes, 8 sticks of butter. This double recipe is not for the faint of heart, or folks with a bad heart.
All the ingredients don’t fit in my huge bowl, so I just mix the butter, sugars and wet ingredients, then divide in half and use two big huge bowls.
I make all the dough, refrigerate a few hours, then form the rolls. Ready to bake in the morning. Of course, a few rolls to give away and a few for the freezer for later. (Okay, now I’m getting hungry. 🤦‍♀️)

Seriously, I hope you try these cookies. They really are super delicious. Perfect for the holidays.

“There’s only one recipe in my cook book. Ingredients: Love, Preparation time: All your life, Serves: All friends and family, and enough left over to share.”

~Toni Armenta Andrukaitis

*********************

When I cook and bake, I don’t mess around. I never learned to cook for one, so when I go through the trouble of a culinary endeavor, I make sure there is plenty to share. Deciding to make some of my favorite chocolate chip cookies, I pulled out my well worn favorite cookie recipe. I really need to copy it down, as it’s worn and torn and probably over  25 years old. I love it because it calls for flour and ground oatmeal, 9 cups total. (I don’t grind it too fine, then even reserve a cup or two of it whole) Being an over achiever, I always double the recipe. Yes, 18 cups of flour/oatmeal, 4 cups of butter, 8 eggs, etc. I think I used 5 bags of chocolate chips. (No bars chopped)

I can’t fit all the ingredients in one bowl, so I just mix the butter, sugars, eggs etc., in the mixer, then scoop out half of the wet portion, working from there.

I make a big mess, flour flying all over, wrappers flapping around, music playing in the background. It’s an all day event.

I always like to save a small lump of the mixture to add peanut butter to. Yum! Peanut butter cookies, dredged in sugar before baking, then dipped in melted chocolate on the ends, like Mrs. Fields used to do.

Now, here’s my tip. I make this huge conglomeration and store in the fridge. I take some of the mixture and form into rolls with Saran Wrap. These can be frozen or given to friends. I gave a couple rolls to Jim to take back home with him yesterday.

The reason I doubled the recipe is so I can have plenty of cookies to bake fresh and take over to Fire Station #5 and #2 for Septemebr 11. I’ve been taking baked goodies to my local fire station every 9/11 since…well…since after the first 9/11. This year, I’ll probably stop by on 9/10, because the stations are usually involved in some commemorative  ceremony or out on calls on 9/11. Scoop or slice, both are nice. (A little rhyme)

Parchment paper on the cookie sheets prevents them from sticking and burning, and the sheets can be used over and over, and even flipped over for more usage. No parchment paper, no problemo. Cut open a brown sandwich bag, works great. Plus, I do a LOT of baking, so I invested in the Airbake insulated cookie sheets. They cost a little more, but I’ve had them for eons. A good investment. But, the parchment or brown bag helps any surface.

This small batch is going with me to my St. Gabriel support group tonight.

Ah…just out of the oven now…kitchen smells good!

Or lots of love and lots of butter!
