Saturday:) Sayin’ Thank You To My Favorite “Peeps”

This morning, I was sittin’ around with all my Peeps. Everybunny was relaxing. But, that didn’t last long. I still had much to do.

Yesterday, I baked around 150 mini chocolate cupcakes with a cherry in the middle, then made the frosting. This morning, it was time to frost, decorate and dispense the marshmallowy concoctions.

Now, here’s my secret, I use a thin pretzel to secure the Peep to the cupcake. Otherwise they tip over. (Experience talking)

I know, I know, it’s not all about bunnies and candy and Easter egg hunts and new clothes. It’s about the ultimate sacrifice, death and resurrection of Our Lord. But, it’s still a good time to count your blessings and say thank you to the people who sacrifice and care for us here on earth.

Easter Sunday:) Sunday Sermon and MORE Cute Firemen

Easter is a time of renewal, rebirth, resurrection and rejoicing. As a child, sometimes I concentrated more on new clothes, Easter eggs, candy and family gatherings. As I matured, I learned the true meaning of the special day. Appreciation.

John 3:16

16 For God so loved the world that he gave his one and only Son, that whoever believes in him shall not perish but have eternal life.
Mom and I had fun making four dozen cupcakes with the cute bunny Peeps, complete with mini marshmallow tail and two jelly beans in front.

It was a labor of love, and silliness. If you know me, lots of silliness.

We baked through the night and freshly frosted and decorated through the morning.

Oh, I forgot to show you the funny face I made before I started mixing. Yes, lots of silliness.

We went downstairs for the 10:30 Catholic Mass, and we brought a cupcake for everyone there, and a few extra for family.

The Gospel today, of course, was about finding the stone in front of the burial place of Jesus moved away and and the tomb empty, the burial clothes on the ground. The disciples and followers realized what had occurred. Thus, we have the first Easter. Alleluhlia! 

My take on it….the ultimate sacrifice redeemed us all. The small sacrifices we make for the good of others could never compare, but are a tribute to He who did. Also, a good lesson on appreciating all those who have and currently sacrifice for us.


My post from yesterday was about the screeching fire alarm here at Mom’s place and the five fire trucks that were dispatched to The Greens of Elgin. Mom and I decided that it would be nice to share some bunny cupcakes with the local firemen who sacrifice so much for their community, willing to put their lives on the line every day. I went over to Elgin Station 2 with a dozen cupcakes. I showed them Mom’s picture above, and told them that we appreciated all they do for the community. (I’ve expanded my Firefighter cupcake drive-by stops to another city and state. I hope my McKinney MFD guys don’t get jealous.)

Mom still isn’t able to get around too well yet, but she had enough energy to take her walker down the hall to a few neighbors. (Hmmm? I wonder where I get it from?)

Tuesday:) Taking My Peeps On The Road

I’m finally done! I spread a lot of sunshine, choclate cupcakes, and marshmallow Peeps around town. I didn’t get to everyone, sorry if I missed you. But, I did get to my two fire stations, my senior artists, my single/mingle group, my neighbors, and the two adorable little boys across the street. Last night, I actually rang a few doorbells in my neighborhood. I said, “Put out your hands. You’ve been Peeped. Hoppy Easter.” I put a cupcake in each hand and walked away.  I know I’m early for Easter, but better too early than too late.

I made 122 cupcakes in all. I only had 120 Peeps, so I was forced to eat two cupcakes without the colorful bunny.. The sacrifices I make.

Road trip. “On the road again.”

Tuesday Time With Special Friends

Part two of “Meet Da Mamma” from Monday. We cleaned, cooked and baked for our gathering. I invited a few dear friends to stop by to meet my mom who was visiting from Chicago. It was an open house, so I didn’t get a chance to take a lot of pictures of friends coming and going. Plus, I was so busy socializing, I plum forgot.

One of my favorite things to make is my bunny cupcake made with marshmallow Peeps. They are so cute. I don’t think anyone actually ate any here, but everyone took some home to enjoy later or share with spouses or grandkids.



Aren’t they cute? They are little mini cupcakes, chocolate with a cherry from cherry pie filling inside and homemade cream cheese frosting. Yum!


Thanks for the visit, girls. Also a big thank you to all my other friends not in the photo. Mom enjoyed meeting all of you, or “y’all” as we say here in Texas. Love you guys!


Oh yes, there were lots of brownies!!! But, more on that tomorrow…
